We've all been taught that milk builds strong bones and teeth. (Good calcium, right?) Surprisingly, studies show that countries with the highest milk consumption also have the highest rate of osteoporosis. How can this be? The answer may lie in the acidic response pasteurized milk has in the body. Even though a cup of milk supplies about 300 mg of calcium, the acid reaction in the body requires calcium to be pulled from the bones to neutralize milk's acidity. The ironic result is a net decrease in calcium in the bones. To maximize bone health, consider substituting rice or almond milk for cow's milk, and/or adding unsweetened, cultured dairy products such as yogurt, kefir, or sour cream to the diet.
